Ingredients:
5 zucchini
1 teaspoon salt
1 red bell pepper
1-1/2 cups mozzarella cheese
Cooking spray
3 tablespoons flour
1 cup dry bread crumbs
4 oz. tomato sauce
1/2 cup grated parmesan
Salt and black pepper to taste
Wash the zucchini, cut off both ends. Shred them with a food processor or the larger blade of a cheese grater. Sprinkle with 1 teaspoon of salt, mix well and let them sit for 15 minutes. Coarsely chop the bell pepper, shred the mozzarella, and set them aside. Preheat the oven at 375 degrees, grease a large baking dish with cooking spray.
Squeeze and discard excess liquid from the zucchini. Add flour, bread crumbs, tomato sauce, mozzarella, red bell pepper, parmesan and salt and pepper. Mix well and arrange in the baking dish, pressing lightly to make a smooth top, and bake for 45 minutes or until the top is golden brown. Let stand 15 minutes before cutting in bite size squares. Serve hot.
NOTE: For best results refrigerate and cool thoroughly before cutting, then reheat. Also, it can be made a day or two in advance; it stores well in the refrigerator.
NOTE: For a variation, sprinkle an additional 1/2 cup of shredded mozzarella cheese over the top and let it sit in the hot oven an additional 5 minutes or until the mozzarella is melted.
