Spaghettini in Anchovy Sauce

Spaghettini with anchovy sauce is traditionally one of our holiday dishes. Anchovies were also a welcome anytime addition to a light meal. Snacking on freshly baked bread still warm from the oven with a crunchy crust, anchovies, olives and olive oil... YUMM!!! Just the aroma was an assault on the senses!

Preparation time: 15 minutes
Cooking time: 45 minutes
Servings: 4


3 garlic cloves,
1/2 a bunch of parsley (about 1/2 cup, finely chopped)
3 tablespoons olive oil
1 can (2 oz) anchovies in olive oil
2 cups (14 oz can) tomato sauce
salt and crushed red pepper to taste
1 lb thin spaghetti or spaghettini
grated Romano or Parmesan cheese (optional)
