Summer Bread


1 loaf Italian or Mezzaluna bread;
3/4 cup olive oil;
1/4 cup fresh basil, finely chopped;
2 garlic cloves, finely chopped;
1/4 cup grated Parmesan;

Turn the oven on at 400 degrees. Cut the loaf of bread lengthwise, turn both pieces cut side up, place them in a cookie sheet, and bake for 5 minutes or until the cut sides look gold.

In a small bowl combine the olive oil, basil, garlic, and grated cheese. Spread the mixture evenly with a spoon over the 2 pieces of bread. Let sit for a few minutes, cut and serve.

This recipe makes a tasty appetizer, and it's also delicious with dinner.
